Bannock – Palaugaaq

Bannock is something that I have always loved, it is something every Inuit person knows and has tried at least once. I have tried many recipes, and while there are so many variations - this recipe is the one that tastes like the bannock I had growing up. In high school we would have elders who would make bannock for the entire school (of about 150 people) everyday for recess, we would all line up to get our 1 or 2 pieces of bannock. I always wanted more though, and this stuff is so good it's hard to stop eating once you tried it. This snack has a huge place in my heart and reminds me of simpler days, try this recipe if you want a fluffy and soft bannock to share with your friends and family that they will love.

Bannock

Recipe

2 1/2 cups flour

2 1/2 tablespoons powdered milk (carnation brand)

1/4 cup sugar (optional)

2 tablespoons of oil

1 tablespoon baking powder

1 1/2 of Luke warm water can use more of warm water if too floury.

1 teaspoon salt

Knead no more than five times, let set for about ten to fifteen minutes and then take size of dough desired and poke a hole in middle, flatten it out into disc shape and fry in oil/lard in frying pan, cool them and serve. For bigger batches double up the ingredients. For a fun twist dust warm bannock with icing sugar for more of a donut taste
